The farm
The farm is situated around the walls of Castello di Tignano in Barberino Tavarnelle. It’s an old military fortress dating back to 1000 A.C. That’s the reason why the farm is called Terre del Castello. The farm consists of a 4 hectares olive grove and a vineyard of about 1.6 hectares. There are about two thousand olive trees, mainly of Frantoio cultivar, along with a small quantity of Leccino and Moraiolo.
It's a family run business and we have always been motivated by the passion for quality and the ambition for excellence. That is why olives are harvested exclusively by hand and we assure a completely mechanical pressing within six hours. The filtering guarantees a high-quality oil, avoiding oxidation and damaging processes. The conservation in steel containers in nitrogen modified atmosphere allows to maintain the unaltered taste of the oil, even after months since the pressing.
From Sangiovese grapes it’s obtained a red wine with an intense colour and a vanilla taste, after 18 months ageing in French barriques. The farm boasts a highly exclusive small production of vin santo produced from Malvasia grapes rigorously placed on reed racks for about 70 days before the vinification in oak kegs, caratelli, which lasts not less than 7 years. Vin santo production follows and fully respects the rules of the Tuscan tradition.
