Sensory analysis:
Visual analysis: clearness derives from the perfect filtration along with the olives pressing.
Olfactory analysis: medium fruity aroma of cut grass, green olive, anchovy, almond.

The olive trees are about 2300, with a prevalence of “frantoio”, a small part of Leccino and Moraiolo. Olives are harvested exclusively by hand.
The olive pressing is really rapid, within six hours from the harvest at most, and it’s carried out by mechanical procedures rigorously at low temperatures.
The product is immediately filtered, which guarantees a high-quality oil, avoiding oxidation and damaging processes. The conservation in steel containers in nitrogen modified atmosphere allows to maintain the unaltered taste of the oil, even after months since the pressing.
