Our Extra Virgin Olive Oil 2023/2024 is produced in Barberino Tavarnelle, Castello di Tignano , in the heart of Tuscany. Obtained from a blend of Frantoio (70%), Moraiolo and Leccino (30%) , this oil is the result of meticulous care in every phase of production, from harvest to conservation.
Sensory Analysis
- Visual examination : Clear thanks to immediate filtering after crushing.
- Olfactory examination : Medium fruity with hints of cut grass, green olive, artichoke and almond .
- Taste-olfactory examination : Bitter and spicy of medium intensity , with good persistence and a perfect balance between taste and smell.
Cultivar and Production Area
- Blend : 70% Frantoio, 30% Moraiolo and Leccino.
- Area : Tuscany, Barberino Tavarnelle, Tignano Castle.
- Producer : Paolo Gianni.
- Olive trees : Approximately 2,300 plants, harvested exclusively by hand .
Crushing and Preservation
The olives are pressed within 6 hours of harvesting with mechanical processes at low temperatures , thus preserving aromas and nutritional properties. The oil is immediately filtered , avoiding oxidative processes that could compromise its quality. Conservation takes place in steel containers in a nitrogen atmosphere , guaranteeing an authentic taste even months after pressing.
